This year we dressed Molly up as the most disgusting, offensive, hated, malicious, detestable thing in the world. After all, not only is Halloween for scary, horrible things but it’s also the one day where it’s ok to dress your dog up.

MONDAY: Beef Roast with Roasted Potatoes and Sauteed Spinach (Leftover from last week and the last non-Cooper meat we’ll be eating for the next year. We opted for Breakfast for Dinner last night instead. Mmmm….pancakes.)

TUESDAY: Burgers, Sweet Potato Fries, Broccoli Salad and Sopapilla Cheesecake (Small Group)

WEDNESDAY: Pizza/Leftovers (CORE)

THURSDAY: Fiery Fish Tacos with Crunchy Corn Salsa and Black Beans

FRIDAY: Evan Out


SUNDAY: Southwest Chili with Cornbread

clean out the freezer/cooper’s coming/I like cow

This weekend Evan and Chris are heading up to Childress to pick up Cooper.

No, not my deceased childhood pet. (A Yorkie named Cooper)

Our cow.

Our engineered-and-bred-to-be-extra-delicious cow. Yum.

The boys are picking him up at the butcher in Childress and bringing him back to Austin and Houston, to be divided up amongst everyone who bought in on the grass-fed cow raised by Chris’s family in Childress. We ordered a half side, so we’re soon going to be overloaded with meat, hopefully enough to last a good portion of the year. What it really means though, is that I need to clean out our freezer. Stat.

Today i took inventory of our freezer’s contents and now I’m planning meals based on what I found.

Here are the contents:

  • Large bag of coffee beans
  • Half bag of artichokes
  • 2 bags of sweet corn
  • Bag of cut spinach
  • Half bag of pearl onions
  • Half bag of peas
  • Half bag of sugar snap peas
  • Bag of sliced peaches
  • 12 frozen spanakopitas
  • 1 Totino’s pizza
  • 2 chicken quarters
  • a pound of scallops that I don’t trust not to make me sick, and they’re my fav so this breaks my heart
  • 2 packages of deer sausage links from a hunting trip
  • Small amount of cooked shrimp
  • Half pound of chicken tenders
  • A small fryer chicken (full disclosure-this has been there for over a year, it is by far the thing I’m ashamed of in my freezer)
  • 2 slices of Jenny’s birthday cake (Shake’s custard cake mmmm….)
  • Carton of vanilla ice cream with about 1/3 cup ice cream remaining
  • Beef Roast
  • One pie crust
  • The bowl for my ice cream maker
  • 4 glass mugs that are nice and frosty

Really, I think it could be worse.

I can throw away: the scallops, fryer chicken, cooked shrimp and sugar snap peas and peas (they had freezer burn).

I can move: the ice cream maker bowl, the mugs, and the coffee.


Then I can roll the rest of it into my meal planning for the week:

Monday- Mexican Chicken Corn Chowder and Spicy Roasted Chicken

Tuesday- Dinner with Papa Pro

Wednesday- Totino’s, Cake and Ice Cream (CORE)

Thursday- Chicken Fried Steak, Mashed Potatoes, Corn, Green Beans, Rolls and Peach Pie

Friday- Beef Roast with Potatoes and Pearl Onions and Sauteed Spinach

Saturday- Gypsy Picnic

Sunday- Sausage with Spicy Mustard and Grilled Artichokes and Spanakopitas

So kind of a random week, but a random week celebrating Cooper. Next week expect some beef on the menu. 🙂
